Binchotan, the black gold of Japan. Binchotan is made in Japan in a wonderful traditional way, in kilns of stone and clay. Binchotan is charcoal in its purest form. It has a carbon percentage of 95%. Binchotan is the perfect fuel to use in your Shichirin table grill.
Binchotan can reach extremely high temperatures, up to 1000°C! In addition, it can burn for 4 to 6 hours. Ideal for an afternoon or evening of grilling with friends and family around the Shichirin. This fuel is also indispensable for use in your restaurant. The combination of constant temperature, high temperature and long burn time is unique.
Because the composition of Binchotan is so compact and strong, this charcoal is also quite difficult to light. We also like to use a softer charcoal bed to make the Binchotan easier to burn. Read how to proceed below.
