Salmon with teriyaki sauce

Light the Acacia charcoal and Binchotan and fully open the slides of the Shichirin. Make sure the Shichirin is thoroughly hot and place the grill on the Shichirin.

Combine the soy sauce, mirin, sake and sugar in a large bowl and stir well. Heat this mixture in a small pan on the Shichirin grate so that the sugar dissolves. After two minutes, check to see if the sauce has the desired flavor and thickness.

Now remove the grill and place the Yakitori bars on the Shichirin.  Put the skewers through the salmon legs and coat them with the teriyaki sauce. Then grill the salmon legs for 2 minutes per side.

Meanwhile, prepare the noodles according to the package. Halve the sugar snaps and then stir-fry the vegetables using the sieve above the Shichirin. Finally, serve the salmon on the noodles with some vegetables and finish with some extra teriyaki sauce and sesame.
