A modern Konro grill with Japanese roots
Grilling on a Shichirin is not ordinary barbecuing, it is a different discipline: more refined, more elegant and smaller. You lay small pieces of meat, fish and vegetables directly above the glow of the coals and so keep precise control over the cooking. The Japanese have used the Shichirin since the Edo period. We were the first to bring this original Japanese grill to the Dutch market, and the design is ours. With a table grill, material quality matters a great deal, because it decides whether your grill lasts for years.
What is the difference between the Shichirin PRO and the regular Medium Shichirin? The difference is in the construction: the PRO has a double walled design with optimal airflow, a removable ash pan and ceramic in two parts. The regular rectangular Shichirin works with ventilation sliders and comes with a stainless steel grate. Thanks to the airflow you reach high temperatures effortlessly with the PRO, and you take the ash out of the grill in one movement. The ceramic in two parts reduces the risk of breakage and makes a repair easier.
Does the Shichirin PRO hold its temperature better than a regular Shichirin? The double walled design of the PRO is made precisely to reach and hold high temperatures more easily. The ceramic body of quartz and cordierite is fired at high temperature and holds the heat well, so our Shichirin reaches temperatures up to 1000°C. With an even glow you need to adjust less and keep your attention on your skewers.
The right size and shape for your table
How many people is the Shichirin PRO suitable for? The Shichirin PRO Medium is suitable for 2 to 6 people. At 50 cm wide, 24 cm deep and 18 cm high it fits on a regular dining table or outdoor bar. If you regularly grill for more than six people, a larger rectangular Shichirin is a better choice: it has 40% more grilling surface and suits 4 to 8 people.
How big is the Yakiniku Shichirin PRO Medium? The Shichirin PRO Medium measures 50 by 24 cm and is 18 cm high. The grilling surface is 35 by 17.5 cm, over 600 cm², the same as on the regular rectangular Shichirin Medium. That size is chosen for small pieces of meat, fish and vegetables in portions, not for one big piece for the whole table. If you put yakitori bars on it, you turn the skewers in a row above the glow and keep an overview, even with four hungry guests around the grill.
Torn between round and rectangular? The rectangular shape suits a long table and is ideal for yakitori, the round Shichirin (diameter 34.5 cm) invites a group of 4 to 6 to sit comfortably around it. If you already have a Kamado for the big cooks, the Shichirin is the compact addition at the table. That way you have the right Japanese grill for every occasion.
Binchotan, accessories and maintenance
Which charcoal is best for the Shichirin PRO? On the Shichirin PRO you use Binchotan. It has a carbon content of 96 to 98% and burns steadily for 4 to 6 hours, does not spit and gives off little smoke. With our Binchotan charcoal you reach temperatures up to 950°C, so delicate flavours stay pure.
How do you light Binchotan? The easiest way is with a Japanese lighting pan, the Binchopan. The pan has three parts: a base, a middle section and a lid. You stand the pieces of Binchotan upright in the middle section, put firelighters on the base and place the middle section on top. After 15 to 30 minutes the Binchotan glows and you fill your Shichirin, always with tongs or heat resistant gloves. After grilling, the Binchopan also serves as a snuffer: you fill the middle section with the glowing Binchotan and cut off the oxygen with the lid, so you can reuse the coals next time. You can read step by step how to light Binchotan in our guide.
Which accessories do you need for the Shichirin PRO? For perfect yakitori you need yakitori bars and skewers, complemented by tweezers and a fan to steer the glow. Everything beyond that is an extension to your own taste. You lay the yakitori bars on top of the grill as a support for your skewers, so you get a setup like in a Japanese izakaya. If you also want to cook thinly sliced meat or vegetables, add a Teppanyaki plate, which also fits the PRO. Because the grilling surface equals that of the regular rectangular Medium, all Shichirin accessories for the Medium also fit the PRO. A table protector keeps the heat of the ceramic away from your tabletop and with a grate gripper you swap the hot grate safely. You find the complete range at the Shichirin accessories, and if you are just starting out with grilling, the starter packages have everything for your first evening.
After grilling you let the Shichirin cool down completely and take out the removable ash pan. The glazed ceramic finish is easy to clean with a damp cloth or a soft brush, so fat and leftovers do not burn in, and with an ash brush you remove the ash residue. You can read step by step how to do that in how to clean your Shichirin.
