Using the pizza stone
How can you use the pizza stone Kamado? A pizza oven heats the pizza from above and below with proper distribution of heat making it possible to bake pizza in the Kamado. To simulate this operation, place a multilevel lift, heat shield / plate setter and standard grid with the pizza stone above it in your Kamado. Place the heat shield at the bottom and the standard grid at the highest level in the multilevel lift. Without the heat shield, the pizza stone would get so hot that the bottom of your pizza would burn immediately. Place the pizza stone on Kamado. Just before sliding the pizza onto the pizza stone, sprinkle some flour or cornmeal on the pizza stone. This way the dough won't stick and you can see how hot the pizza stone is. The pizza stone is hot enough when the flour slowly turns brown and develops a delicious smell, at a temperature of at least 300 degrees.
Accessories and accessories pizza baking
Besides a pizza stone, we at YAKINIKU® have also included other accessories in our range to make pizza baking even easier. The pizza mouth makes it easy to take pizza or bread in or out of the Kamado. As a result, the Kamado does not lose heat when opened. Ideally, 2 people can place the pizza in the pizza mouth. One person scoops up the pizza using our pizza scoop and slides the pizza onto the pizza stone. The other person can open and close the lid to avoid losing temperature when baking several pizzas.
Pizza mouth | easy pizza baking in the Kamado is done with the pizza mouth. The pizza holder is made entirely of high-quality 304 stainless steel and is available for the Kamado LARGE and XLARGE. The strong powder coating gives the pizza mouth a luxurious look and prevents scratches. These materials make the pizza oven extremely heat-resistant and resistant to all weather conditions.
Pizza server | The pizza server is made of extra-thin stainless steel, which makes it very easy to use. You use the pizza scoop to quickly, safely and easily take the pizza in and out of the Kamado without burning your fingers.
Tips for baking pizza on your Kamado
Follow the tips below to make the best pizzas on your Kamado.
Always start with a clean Kamado. This means that ash residue and excessively small pieces of charcoal should be removed. This will ensure a good flow of oxygen and achieve the highest possible temperature.
You might read everywhere that baking a pizza works best with a wood-fired oven. This is not the case these days, good quality charcoal, such as Marabu, also suffices. Marabu charcoal is a very pure, black charcoal that is economical to use and develops very little smoke. Marabu charcoal achieves temperatures as high as 700 °C and has an average burn time of 4.5 hours. This makes Marabu charcoal extremely suitable for baking pizzas.
Make sure the Kamado and pizza stone are well warmed up. If you start baking pizza on a Kamado while the pizza stone is not hot enough, the dough will stick to the stone. The ideal temperature for baking pizza is between 350 and 400 °C.
During baking and between pizzas, keep the Kamado closed as much as possible to avoid a temperature drop. Bake the pizza for between 5 and 10 minutes between 350 and 400 °C depending on the size and thickness of your pizza. When you see the edges brown nicely and the cheese is slightly grilled then the pizza is ready and the next pizza can be baked.
The perfect pizza starts with making a good base, because you make the tastiest pizza dough yourself!
Vary with different toppings. Usually you start with a tomato sauce, but olive and garlic oils can also be a good start for a delicious fish or seafood pizza. Want a little inspiration? Then take a quick look at our delicious recipe for a delicious pizza margherita or pizza anchovies!
