A rectangular table grill with Japanese roots
The YAKINIKU® Shichirin is a traditional Japanese table grill that we were the first to introduce to the Dutch market, with an in house design. Our Shichirin is made of ceramic with quartz and cordierite, a mineral that withstands high temperatures and sudden temperature changes without cracking. Fired at high temperature, it reaches temperatures up to 1000°C, enough to sear meat in a few seconds. The glazed finish makes the grill easy to clean, and the ceramic protects against rain and snow. As long as you use it outdoors, you can therefore also use it as a winter barbecue under your canopy.
With the ventilation sliders you control the airflow: open for more oxygen and a lively fire, almost closed for a calmer fire. The stainless steel grate comes standard with the grill, and the bamboo and stainless steel details give it a refined look that you proudly put on the table.
You may know this grill as a Konro grill, the traditional variant that was originally made of diatomaceous earth, a material with a very low density and therefore high heat resistance. The name yakitori refers to the preparation: yaki means grilling and tori means chicken, and today it stands for skewers over charcoal. A yakitori grill calls for a long, narrow shape, and that is exactly what the rectangular table grill gives you. Grilling on a Shichirin is being busy together around the fire, a piece of Japanese cuisine at your own table. The Shichirin itself has existed since the Edo period, which began in 1603.
Choosing the right size for your table
Buying a Medium Shichirin means choosing a compact table grill that fits a bistro table just as well as a long dining table. You carry it easily from the kitchen to the terrace.
How many people is the rectangular Shichirin Medium suitable for? The rectangular Shichirin Medium is suitable for 2 to 6 people. With two people you only fill half of the grill with charcoal, which saves fuel. Because everyone grills their own small portions, six people sit comfortably around this grill.
What is the grilling surface of the rectangular Shichirin Medium? The grilling surface measures 35 by 17.5 cm, over 600 cm². That is long enough for a row of skewers side by side on the yakitori bars. Because the fire concentrates on this compact surface, you sear meat quickly while fish and vegetables keep their structure.
If you want extra convenience, look at the PRO, a rectangular Shichirin with a double walled design for optimal airflow, with a removable ash pan and ceramic in two parts, so the risk of breakage is lower and repairs are easier. If you regularly grill with more than six people, the LARGE, a larger rectangular Shichirin, offers a grilling surface that is 40% larger and room for 4 to 8 people. In each of these sizes you get the same ceramic quality.
Lighting, expanding and maintaining
On a Shichirin you use, like the Japanese, Binchotan charcoal. With a carbon content of 96 to 98%, it burns steadily for 4 to 6 hours, does not spit, gives off little smoke and reaches temperatures up to 950°C. You taste that: your ingredients taste of themselves and not of smoke.
How do you light a rectangular Shichirin? The easiest way to light Binchotan is with a Japanese lighting pan, the Binchopan. The pan has three parts: a base, a middle section and a lid. You stand the pieces of Binchotan upright in the middle section, put firelighters on the base and place the middle section on top. After 15 to 30 minutes the Binchotan glows and you fill your Shichirin, always with tongs or heat resistant gloves. Open the sliders so the airflow fans the fire and grill as soon as the core glows white hot. After grilling, the Binchopan also serves as a snuffer: you fill the middle section with the glowing Binchotan and cut off the oxygen with the lid, so you can reuse the coals next time. In this guide you can read step by step how to light Binchotan.
Which accessories are there for the rectangular Shichirin Medium? You can extend the grill with yakitori bars, BBQ skewers, a Teppanyaki plate, tweezers and a fan. You lay the yakitori bars as metal rods on top of the grill, so you can turn skewers above the fire and cook them evenly, like in a Japanese izakaya. You find the complete range at the Shichirin accessories.
After grilling, let the grill cool down completely, remove the ash and wipe the inside clean with a damp cloth or soft brush. How to clean your Shichirin and keep it looking good for years you can read in our tip. Looking for inspiration for the first evening? Expanding the Shichirin
Want to go for the full experience and imagine yourself in Japan for a moment with our table grill Add the YAKINIKU® Tweezers to your Shichirin! These tweezers will make grilling a lot easier. You use the straight tweezers to place raw fish or meat on the grill and the curved tweezers to remove your food from the grill. Of course, the tweezers are also suitable for vegetables.
You can also expand our Shichirin with the teppanyaki plate. Teppanyaki literally means grilling on an iron plate and is a very fine way of cooking. Fresh ingredients are brought into contact with a glowing plate as briefly as possible on a teppanyaki plate and seared at lightning speed, retaining their color, flavor and nutrients.
Yakitori bars are ideal for grilling Yakitori-style. These bars are made of stainless steel and you use on top of the rectangular Shichirin in combination with the BBQ skewers. Using these bars, you can very easily grill meat, fish and vegetables without compromising the taste of your food. When using the bars, you remove the grid and thus release more heat and smoke, intensifying your taste.
What type of charcoal should I use?
Binchotan
The YAKINIKU® Shichirin can only be used outdoors with briquettes, self-lighting briquettes or charcoal. The Japanese use Binchotan charcoal, the black gold of Japan, with which extremely high temperatures can be reached. This charcoal burns longer and at a higher temperature and is quieter than normal charcoal. For burning binchotan, it is best to first make a softer charcoal bed, e.g. with acacia charcoal. Then place the binchotan diagonally on the hot charcoal bed. This way you can light Binchotan easily. It is also possible to light Binchotan with a gas burner, which takes about 15 minutes. Because of the extremely high cooking temperature that the charcoal reaches, you get optimal results with food that stays deliciously juicy inside. A small amount of binchotan is enough to keep the shichirin going for hours.
Quick-Koko briquettes
The BBQ Flavour Quick-Koko briquettes have been specially developed for the Shichirin. The briquettes are made from natural materials and ensure that your Shichirin is ready for use within minutes. The lighter fuel is already included in them, so you don't need to use firelighters. One grill stone allows for an hour of cooking pleasure. The grill stones are individually packed in an airtight and watertight four-pack, making them easy to take along. Guaranteed barbecue fun!
